  • 4 large eggs, separated
  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) warm whole milk
  • 1½ cups (180 g) all-purpose flour, sifted
  • 1 tablespoon baking powder

  • 1 cup (150 g) fresh pineapple, diced
  • 1 can (14 oz / 395 g) sweetened condensed milk
  • ¾ cup (200 ml) heavy cream
  • 2 cups (200 g) freshly grated coconut
  • 1⅔ cups (400 ml) cold heavy whipping cream

    Preheat oven to 350 °F (180 °C). Grease and flour a medium round cake pan.

    Beat egg whites to stiff peaks. Gradually add egg yolks and sugar while continuing to beat until the mixture is pale and fluffy.

    Slowly pour in the warm milk while mixing on low speed.

    Gently fold in the sifted flour and baking powder using slow, sweeping motions to keep the batter airy.
