20 servings

20
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup warm milk
  • 1/2 cup neutral vegetable oil
  • 2 cups all-purpose flour, sifted
  • 5 tablespoons finely sifted yerba mate powder
  • 1 packet baking powder (about 2 teaspoons)

Directions

  1. 1

Preheat your oven to 350°F (180°C) and grease a 9-inch (22 cm) cake pan.

  2. 2

Sift the flour and yerba mate powder together into a large bowl. Set aside.

  3. 3

In a blender, combine the eggs, sugar, warm milk, and oil. Blend until smooth and frothy.

  4. 4

Pour the wet mixture into the dry ingredients and stir vigorously for about 5 minutes.

  5. 5

Add the baking powder last and fold it in gently with a spatula.

  6. 6

Pour the batter into the prepared pan and bake for 30 minutes at low heat (180–200°C / 350–390°F).

  7. 7

Test doneness by inserting a toothpick in the center — it should come out clean.

  8. 8

Allow the cake to cool for 10 minutes before unmolding.

💡 Chef's Tip

For a stronger yerba mate flavor, increase to 6 tablespoons. A dusting of powdered sugar on top adds a beautiful finishing touch before serving.
