🛒 Ingredients

4 servings

4
  • 1 large ripe banana
  • 1 whole egg
  • 80 ml neutral vegetable oil
  • 65 g sugar
  • 60 g whole oat flour
  • 1 tablespoon cornstarch
  • Ground cinnamon, to taste
  • 1 teaspoon baking powder

Directions

  1. 1

Preheat your Air Fryer to 180 °C (356 °F). Grease a 20 cm bundt pan with margarine and dust with oat flour.

  2. 2

Blend the egg for 30–45 seconds until slightly frothy.

  3. 3

Add the oil and sugar, then blend again until smooth and well combined.

  4. 4

Add the banana in pieces and blend until you get a creamy, lump-free batter.

  5. 5

Add the oat flour and blend until the batter is uniform and smooth.

  6. 6

Add the cornstarch and blend briefly to incorporate.

  7. 7

Season with a pinch of cinnamon to taste — use sparingly to let the banana flavor shine.

  8. 8

Add the baking powder last and blend on low speed just until combined.

  9. 9

Pour the batter into the prepared pan and cook in the Air Fryer at 180 °C for 13–14 minutes.

  10. 10

Test with a toothpick inserted in the center — if it comes out clean, the cake is done. Allow to cool briefly before unmolding.

💡 Chef's Tip

The riper the banana, the sweeter and more moist the cake will be. Feel free to swap the sugar for honey or maple syrup for a more natural sweetness.
