  • 3 medium carrots (about 300 g), grated
  • ½ cup (120 ml) sunflower oil
  • 3 eggs
  • 1 cup (200 g) granulated sugar
  • 2 cups (250 g) all-purpose flour, sifted
  • 1 packet (11 g) baking powder
  • ½ cup (120 ml) whole milk
  • For the chocolate sauce:
  • 1¼ cups (300 ml) whole milk
  • 2 tbsp granulated sugar
  • 3 tbsp unsweetened cocoa powder
  • 1 tbsp unsalted butter

    Preheat your oven to 350 °F (180 °C). Grate the carrots and blend them in a blender with the oil and eggs until completely smooth. Pour the mixture into a large mixing bowl.

    Stir in the sugar until combined. Add the sifted flour and milk, mixing until no lumps remain. Gently fold in the baking powder with a spatula, taking care not to overmix.

    Pour the batter into a greased and floured cake pan. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool slightly before unmolding.

    Make the chocolate sauce: combine milk, sugar, cocoa powder, and butter in a saucepan over medium-low heat. Stir constantly for about 20 minutes until the sauce thickens and coats the back of a spoon. Pour generously over the unmolded cake and let set for a few minutes before serving.
