Directions
- 1
Preheat the oven to 350 °F (180 °C). Grease and flour a bundt or tube pan thoroughly.
- 2
Beat the egg yolks, sugar, and margarine together until pale and creamy. Gradually add the milk and flour, mixing until you have a smooth, lump-free batter.
- 3
In a separate clean bowl, whip the egg whites to stiff peaks. Gently fold them into the batter using a spatula with slow, upward strokes to keep it light and airy.
- 4
Stir in the baking powder with a light hand until just incorporated.
- 5
Pour half the batter into the prepared pan. Slice the guava paste into strips and arrange them in a ring over the batter, leaving about ½ inch (1 cm) clearance from both edges of the pan.
- 6
Pour the remaining batter over the guava strips and bake for 40 minutes, until golden and a toothpick inserted in the center comes out clean. Allow to cool before unmolding.
💡 Chef's Tip
Guava paste is available at Latin, Caribbean, or international grocery stores. Can't find it? Quince paste (membrillo) is an excellent substitute with a similar sweet, dense texture.
