  • 1 cup (200 g) granulated sugar
  • 3 cups (375 g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup (240 ml) strong brewed coffee, cooled
  • 1/2 cup (120 ml) vegetable oil
  • 1 teaspoon vanilla extract
  • Butter and flour for greasing the pan

    Preheat oven to 350 °F (180 °C). Grease and flour a 9-inch (24 cm) round cake pan.

    In a large bowl, beat eggs and sugar together for about 5 minutes until the mixture is pale, thick, and fluffy.

    Fold in the sifted flour and baking powder in three additions, alternating with the cooled coffee and mixing well after each addition, until the batter is smooth.
