  • 1 cup (200 g) granulated sugar
  • ¾ cup (200 ml) coconut milk
  • ¾ cup (200 ml) whole milk
  • 1 cup (120 g) all-purpose flour
  • ½ cup (120 ml) neutral oil (sunflower or canola)
  • 1 tablespoon (15 g) butter, for greasing
  • 3 eggs, separated
  • 2½ teaspoons (11 g) baking powder

Directions

    Preheat your oven to 350 °F (180 °C). Grease and flour a 9-inch (24 cm) round cake pan.

    Beat the egg whites to stiff peaks using a hand or stand mixer. Set aside.

    In a large bowl, combine the cornmeal, flour, sugar, and oil, stirring until evenly blended.

    Add the egg yolks and coconut milk, mixing until smooth and fully incorporated.
