Blender Apple Cake

- 1 cup (200 g) sugar
- 3 eggs
- ¼ cup (60 ml) vegetable oil
- 2 cups (250 g) all-purpose flour
- 1 tablespoon baking powder

- 1 teaspoon ground cinnamon

Preheat the oven to 350 °F (180 °C). Generously grease and flour a bundt pan.

Peel the apples, keeping all the peels. Dice the apple flesh into small cubes, sprinkle with sugar and cinnamon, toss to coat, and set aside.

Add the apple peels, oil, sugar, and eggs to the blender. Blend on high for 2 minutes until completely smooth and slightly frothy.

Sift the flour into a large bowl. Gradually pour in the blender mixture, stirring with a spatula until a smooth, even batter forms.

Stir in the baking powder gently. Fold in the diced apples along with any cinnamon juices that have collected.
