  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 2 apples, unpeeled and washed
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar (for the apples)
  • 1 tablespoon ground cinnamon

Directions

    Preheat the oven to 350 °F (180 °C). Grease and flour a baking pan. Peel one apple and set the skin aside; dice both apples into small cubes.

    In a blender, combine the eggs, oil, sugar, and the reserved apple peel. Blend until completely smooth.

    Transfer to a large bowl. Fold in the flour and baking powder with a spatula until just combined — do not over-mix.

    Toss the diced apples with 2 tablespoons of sugar and the cinnamon, then gently fold them into the batter.

    Pour the batter into the prepared pan and dust the surface generously with extra cinnamon and sugar.

    Bake for about 40 minutes, or until a toothpick inserted in the centre comes out clean.
