Directions
- 1
Preheat the oven to 350 °F (180 °C). Grease and flour a baking pan. Peel one apple and set the skin aside; dice both apples into small cubes.
- 2
In a blender, combine the eggs, oil, sugar, and the reserved apple peel. Blend until completely smooth.
- 3
Transfer to a large bowl. Fold in the flour and baking powder with a spatula until just combined — do not over-mix.
- 4
Toss the diced apples with 2 tablespoons of sugar and the cinnamon, then gently fold them into the batter.
- 5
Pour the batter into the prepared pan and dust the surface generously with extra cinnamon and sugar.
- 6
Bake for about 40 minutes, or until a toothpick inserted in the centre comes out clean.
- 7
Cool for 10 minutes, then unmould and finish with another dusting of cinnamon sugar before serving.
💡 Chef's Tip
Granny Smith apples add a pleasant tartness that balances the sweetness, while Golden Delicious keeps it milder. The cake tastes even better the next day once the flavours have melded.
