  • 1 tablespoon margarine (or softened unsalted butter)
  • 1 cup (200 g) granulated sugar
  • 3 eggs
  • 2 medium apples, peeled and diced small
  • 1½ cups (180 g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon (11 g) baking powder

Directions

  1. 1

Preheat the oven to 350 °F (180 °C). Grease and flour a Bundt or tube pan.

  2. 2

In a large bowl, beat the margarine and sugar together until light and well combined.

  3. 3

Add the eggs one at a time, mixing after each addition, then fold in the diced apples.

  4. 4

Stir in the rolled oats and sifted flour until a smooth batter forms.

  5. 5

Add the cinnamon and baking powder and gently mix until fully incorporated.

  6. 6

Pour the batter into the prepared pan and bake for 40 minutes, or until a skewer inserted in the center comes out clean.

  7. 7

Allow to cool for 10 minutes in the pan before turning out. Serve warm or at room temperature.

💡 Chef's Tip

For extra depth of flavour, add a pinch of ground nutmeg or swap one apple for a ripe pear. Store the cake wrapped at room temperature for up to 3 days.
