  • 1 cup vegetable oil (sunflower)
  • 4 eggs
  • 1½ cups granulated sugar
  • 3 apples (Golden Delicious or Fuji)
  • ½ cup raisins
  • 2½ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon baking powder
  • Powdered sugar for finishing

Directions

  1. 1

Preheat oven to 350 °F (180 °C). Grease and flour a large baking pan.

  2. 2

In a blender, combine oil and eggs until smooth. Add the sugar and the peels of 2 apples, then blend again until well combined.

  3. 3

In a large bowl, sift the flour and stir in the baking powder, cinnamon, peeled diced apples, and raisins.

  4. 4

Pour the liquid mixture over the dry ingredients and fold gently with a spatula until a smooth batter forms.

  5. 5

Pour batter into the prepared pan and bake 40–45 minutes, until a toothpick inserted in the center comes out clean.

  6. 6

Allow to cool slightly, then dust generously with powdered sugar and a pinch of cinnamon before serving.

💡 Chef's Tip

Blending the apple peels into the batter adds natural flavour and a gorgeous golden hue. Swap raisins for chopped walnuts for a delightful crunch.
