  • 4 apples (Golden Delicious or similar), peeled and diced
  • 4 eggs
  • 2 cups (400 g) brown sugar
  • 2 cups (200 g) rolled oats
  • 5 tablespoons (75 g) unsalted butter, melted
  • 1 cup (150 g) self-rising flour
  • 1 tablespoon ground cinnamon
  • Butter and flour to grease the pan

Directions

    Preheat your oven to 350 °F (180 °C). Grease and flour a bundt or ring-shaped pan.

    In a large bowl, beat the eggs and brown sugar together until smooth and slightly fluffy.

    Add the melted butter and continue beating until fully incorporated.

    Turn off the mixer. Fold in the diced apples, then add the flour, rolled oats and cinnamon. Stir gently with a wooden spoon until all ingredients are evenly combined.

    Pour the batter into the prepared pan and spread it out evenly.

    Bake for 30 to 35 minutes, or until a knife inserted all the way to the centre comes out clean — testing to the bottom ensures even doneness throughout.

    Let the cake rest for 10 minutes before unmoulding onto a wire rack. Serve warm or at room temperature.

For a decadent finish, drizzle the cooled cake with warm dark chocolate sauce. You can also swap the apples for ripe mashed bananas, or combine both fruits for a surprisingly delicious result.
