Moist Chocolate Coconut Cake with Homemade Chocolate Sauce

- 1 package chocolate cake mix (500 g)
- 150 ml milk (⅔ cup)
- 3 eggs
- 40 g softened margarine or butter
- 50 g shredded coconut
- 2 tbsp margarine (sauce)
- 7 tbsp sweetened cocoa powder (sauce)
- 500 ml milk — 2 cups (sauce)
- Chocolate sprinkles to decorate

Preheat the oven to 180 °C (350 °F). In a large bowl, combine the cake mix, softened margarine, eggs, milk, and shredded coconut.

Beat with an electric mixer for 4 minutes, or by hand for 6 minutes, until the batter is smooth and lump-free.

Pour the batter into a greased and floured cake pan. Bake for about 40 minutes, or until a toothpick inserted in the center comes out clean.

While the cake cools slightly, make the sauce: in a saucepan, heat the milk, margarine, and cocoa powder over medium heat, stirring constantly until it comes to a boil.

Pour the warm chocolate sauce generously over the cake and scatter chocolate sprinkles on top. Allow to set before slicing and serving.
💡 Chef's Tip
Swap regular milk for coconut milk in both the batter and the sauce for a richer, more tropical flavour. Mini chocolate chips folded into the batter also add a lovely texture.
