  • 2 tablespoons unsalted butter, melted
  • 400 g (3 cups) all-purpose flour
  • 120 g (1 cup) unsweetened cocoa powder
  • 200 ml (¾ cup) whole milk
  • 2 heaping tablespoons honey
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 tablespoon baking powder
  • 150 g milk or dark chocolate, roughly chopped

    Preheat oven to 180 °C (350 °F). Grease and flour a large baking pan.

    In a large bowl, whisk the eggs with the brown sugar until pale, fluffy, and doubled in volume.

    Stir in the melted butter, honey, cinnamon, and ground cloves until fully combined.

    Sift in the flour and cocoa powder in two additions, alternating with the milk, and fold gently until a smooth, lump-free batter forms.
