Directions
- 1
Make the caramel: melt 3/4 cup sugar in a saucepan over medium heat, stirring gently. Carefully add the hot water and let it reduce slightly until you have a smooth, fluid caramel.
- 2
Pour the hot caramel only into the bottom of a greased and floured cake pan (no tube pan). Lay the banana slices lengthwise over the caramel. Set aside.
- 3
In a blender, combine the eggs, 2 cups of sugar, and oil. Blend until smooth and well combined.
- 4
Add the milk and blend again. Gradually add the flour with the blender running to prevent lumps.
- 5
Add the baking powder last and blend very briefly — just enough to incorporate it. Do not over-blend.
- 6
Gently pour the batter over the bananas in the pan. Bake at 400°F (200°C) for 30 to 40 minutes, until a toothpick inserted in the center comes out clean.
- 7
Let the cake rest for 5 to 10 minutes, then unmold by flipping it onto a serving plate. The caramelized bananas will be beautifully displayed on top.
💡 Chef's Tip
Apply caramel only to the bottom of the pan — buttered and floured sides are enough — to keep the sweetness balanced. The riper the bananas, the more fragrant and flavorful the result.
