🛒 Ingredients

4 servings

4
  • 3 tablespoons instant coffee
  • 120 g sugar (about 10 tablespoons)
  • 22 g unsalted butter (1½ tablespoons)
  • 20–45 ml whole milk (optional, for a softer glaze)

Directions

  1. 1

Melt the butter over low heat in a small saucepan, taking care not to brown it.

  2. 2

Add the sugar and stir gently until it softens and begins to dissolve.

  3. 3

Stir in the instant coffee; pour in the milk now if you prefer a looser consistency.

  4. 4

Keep stirring over low heat, always in the same direction, for 10–20 minutes until the glaze thickens and coats the back of a spoon.

  5. 5

Remove from heat and pour immediately over your cake or dessert of choice.

💡 Chef's Tip

Always stir in one direction to prevent crystallisation. A splash of warm milk stirred in at the end will give you an extra-glossy finish.
