🛒 Ingredients

1 servings

1
  • 1 can sweetened condensed milk (14 oz / 397 g)
  • 1 tablespoon pastry emulsifier
  • ⅔ cup heavy whipping cream, well chilled and strained
  • 1 teaspoon pure vanilla extract

Directions

  1. 1

Refrigerate the condensed milk and heavy cream for at least 1 hour before starting — cold ingredients are key to achieving a light, stable texture.

  2. 2

Combine the chilled condensed milk, heavy cream, emulsifier, and vanilla extract in the bowl of a stand mixer or a large bowl if using a hand mixer.

  3. 3

Beat on the highest speed for 15 to 20 minutes, scraping down the sides occasionally, until the frosting is thick, glossy, and holds firm peaks.

  4. 4

If desired, add a few drops of liquid food coloring and mix on medium speed for 30 seconds until the color is evenly blended throughout.

  5. 5

Use immediately to frost or pipe onto cakes and desserts, or cover with plastic wrap and refrigerate for up to 24 hours.

💡 Chef's Tip

Keep all ingredients as cold as possible throughout the process for the best volume and stability. The emulsifier is the secret ingredient that gives this frosting its smooth, hold-all-day texture — don't skip it!
