- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 3 tbsp fresh flat-leaf parsley, chopped
- 2 tbsp fresh chives, chopped

- 1/2 tsp ground black pepper
- 2 tbsp olive oil or sunflower oil
- For the Lemon Herb Mayonnaise:
- 4 tbsp mayonnaise
- Juice of 1/2 yellow lemon
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1 pinch salt and pepper
- For Serving:
- 1/2 head romaine or iceberg lettuce
- 2 fresh tomatoes, cut into wedges
- A few sprigs of fresh herbs (parsley + chives mixed)

In a large bowl, combine the ground chicken, minced garlic, finely chopped onion, chopped parsley, and chives. Season with salt and pepper.

Mix all ingredients well with clean hands for 1 to 2 minutes, until you have a homogeneous and well-bound mixture. The more you work the mixture, the firmer the meatballs will be.

Lightly moisten your hands with cold water to prevent the mixture from sticking. Form meatballs the size of a walnut (about 1 oz each), rolling them between your palms. You should get 16 to 18 meatballs.

Heat the oil in a large non-stick skillet over medium-high heat. When the oil is hot, add the meatballs in a single layer, without overcrowding. Cook for 3 to 4 minutes without touching them.
