Directions

  1. 1

Melt the dark chocolate in a double boiler over low heat, without letting it boil. Stir gently until the texture is smooth and homogeneous.

  2. 2

Pour the melted chocolate onto a baking sheet lined with parchment paper. Spread evenly with a spatula to a thickness of about 1/4 inch.

  3. 3

Generously and immediately sprinkle the surface with the red fruits, almonds, pistachios, and candied orange. Press down lightly so they adhere well.

  4. 4

Sprinkle with a pinch of fleur de sel to enhance the sweet and salty flavors.

  5. 5

Let harden in the refrigerator for 2 to 3 hours until the chocolate is completely solid and crisp.

  6. 6

Remove from the refrigerator and break the bark into irregular, bite-sized pieces with your hands.

  7. 7

Store in an airtight container in the refrigerator for up to 2 weeks.

💡 Chef's Tip

For a more elegant presentation, melt a little white chocolate and drizzle thin lines over the surface before adding the toppings. You can also add dried chili flakes or candied ginger for an exotic and spicy touch.
