6 servings

6
  • 5 medium potatoes
  • 500 g ground beef
  • 1 can sweet corn, drained
  • 200 ml heavy cream
  • 2 tbsp cream cheese (requeijão or Philadelphia)
  • 4 tbsp tomato sauce
  • ½ onion, finely chopped
  • 1 tbsp butter or margarine
  • 2 tbsp olive oil
  • 100 g shredded mozzarella
  • Crispy shoestring potato sticks, to taste
  • 2 garlic cloves, minced
  • Ground cumin, dried oregano, fresh cilantro and salt to taste

Directions

  1. 1

Boil the potatoes in salted water until fork-tender. Drain and mash thoroughly while still hot using a potato ricer or masher. Set aside.

  2. 2

Heat the olive oil in a skillet over medium heat. Sauté the onion and garlic until softened and lightly golden. Add the ground beef and cook until browned, breaking it up as you go. Season with cumin, oregano, cilantro and salt. Stir in the tomato sauce, fold in the corn and remove from heat.

  3. 3

In a saucepan, melt the butter over low heat and add the mashed potatoes. Stir in the heavy cream and cream cheese, mixing until perfectly smooth and creamy. Adjust salt to taste.

  4. 4

In a greased baking dish, spread a thin even layer of mashed potato over the base. Spoon the entire beef mixture on top.

  5. 5

Cover with mozzarella slices, then spread the remaining mashed potato over the top. Finish with mozzarella strips and a generous layer of crispy potato sticks.

  6. 6

Bake at 180°C (350°F) for 15 minutes until the cheese is melted and golden. Broil for 2 extra minutes for a deeper crust. Serve piping hot.

💡 Chef's Tip

Swap cream cheese for sour cream or ricotta for a different flavour. The assembled dish keeps well in the fridge for up to 24 hours before baking — just add 5 minutes to the oven time straight from cold.
