  • 2 kg (4.4 lb) shrimp, peeled and deveined
  • 2 cans tomato sauce (14 oz each)
  • 7 oz cream cheese
  • 3/4 cup (200 ml) coconut milk
  • 3/4 cup (200 ml) heavy cream
  • 2 tablespoons cornstarch
  • 3 tablespoons olive oil
  • 1 bunch fresh cilantro, chopped
  • 5 garlic cloves, minced
  • 1 large onion, diced
  • 1 lb (500 g) sliced mozzarella
  • Juice of 2 limes
  • Salt and freshly ground black pepper

Directions

    Season the shrimp with salt and lime juice. Let marinate for 10 minutes while you prepare the remaining ingredients.

    Heat the olive oil in a large pan over medium heat. Sauté the diced onion and minced garlic until golden and fragrant.

    Add the shrimp, pour in the tomato sauce, and season with black pepper. Simmer over low heat for 5 minutes.

    In a bowl, whisk together the cornstarch, heavy cream, and coconut milk until smooth. Pour gradually into the simmering sauce while stirring constantly until thickened.

    Stir in the cream cheese and chopped cilantro, mixing until the sauce is smooth and creamy.

    Transfer everything to a baking dish. Layer the mozzarella slices on top, overlapping to cover the entire surface.

    Broil in a preheated oven at 400 °F (200 °C) for 10 to 15 minutes until the mozzarella is melted and golden. Serve immediately with white rice and shoestring potatoes.

For extra depth of flavor, marinate the shrimp with garlic and lime for 30 minutes in the fridge before cooking. Ricotta or mascarpone work beautifully as a substitute for cream cheese.
