🛒 Ingredients

10 servings

10
  • 2.2 lb (1 kg) chicken breast fillets
  • 1.1 lb (500 g) potatoes
  • 1 cup (250 g) mayonnaise
  • 1 cup grated Parmesan or mozzarella
  • Salt and black pepper to taste
  • 1 tsp garlic powder (optional)

Directions

  1. 1

Preheat your oven to 350 °F (180 °C). Peel the potatoes and slice them into thin rounds, about ¼ inch thick.

  2. 2

Pound the chicken fillets to an even thickness of roughly ½ inch. Season both sides with salt, pepper, and garlic powder if using.

  3. 3

Arrange the chicken in a single layer in a greased baking dish. Layer the potato slices on top and season lightly with salt.

  4. 4

Spread the mayonnaise evenly over the potatoes to coat them completely, then sprinkle a generous layer of grated cheese on top.

  5. 5

Cover the dish tightly with aluminum foil and bake for 1 hour.

  6. 6

Remove the foil and bake for an additional 15 minutes until the top is golden and bubbling. Let rest 5 minutes before serving.

💡 Chef's Tip

Swap mayonnaise for sour cream or Greek yogurt for a tangier flavour. Adding sliced onions between the layers brings extra depth. Leftovers reheat beautifully in the oven the next day.
