Directions
- 1
Prepare the mash while potatoes are still warm: stir in butter until melted, add milk and salt, and beat until smooth and creamy. Spread evenly across the bottom of a baking dish.
- 2
In a skillet over medium heat, sauté the grated onion until golden. Add the seasoned chicken and cook, stirring often, adding a splash of water if needed to prevent sticking.
- 3
When the chicken is nearly cooked through, add the soy sauce and cook for another 2 minutes until lightly caramelized. Spread evenly over the mashed potato layer.
- 4
Spoon the cream cheese over the chicken and spread into an even layer. Scatter the potato sticks on top.
- 5
Bake at 180 °C (350 °F) for 15–20 minutes, until the cream cheese is melted and the potato topping is golden and crisp. Serve hot straight from the dish.
💡 Chef's Tip
Swap potato sticks for breadcrumbs mixed with Parmesan for a classic gratin crust. Leftover rotisserie chicken works perfectly here and cuts prep time in half.
