4 servings

4
  • 5 to 6 small or medium potatoes, cooked
  • 1 pinch of salt
  • 1 small carton of heavy cream (about 200 ml)
  • 2 small garlic cloves, crushed
  • 2 tablespoons olive oil
  • 1 small fresh chili pepper, finely chopped
  • 1 level tablespoon dried oregano
  • 4 slices mozzarella, diced
  • 4 slices turkey ham, diced
  • 2 hard-boiled eggs, sliced
  • 2 tablespoons mayonnaise
  • 2 large slices turkey ham, for layering
  • 2 large slices cheese, for layering
  • 4 cups cooked rice
  • 1/2 can sweet corn, drained
  • 200 g creamy spreadable cheese (like requeijão or cream cheese)

Directions

  1. 1

Mash the cooked potatoes, then stir in the salt, olive oil, oregano, crushed garlic and finely chopped chili. Mix well.

  2. 2

Add the diced turkey ham and mozzarella, then pour in the cream a little at a time, stirring until the mash is smooth and creamy.

  3. 3

Spread the mashed potatoes into a small lightly greased baking dish.

  4. 4

Cover with a layer of turkey ham slices, then a layer of cheese, and finish with the sliced hard-boiled eggs.

  5. 5

Spread a generous tablespoon of mayonnaise over the top.

  6. 6

Set the dish aside while you prepare the rice topping.

  7. 7

In a bowl, mix the cooked rice, sweet corn, mayonnaise and creamy cheese until smooth and rich. Add more cheese or mayonnaise to taste.

  8. 8

Spread the rice mixture in an even layer over the reserved mash.

  9. 9

Arrange the remaining egg slices on top of the rice.

  10. 10

Finish with a spoonful of mayonnaise so the cheese sets, then serve chilled or bake briefly in the oven.

💡 Chef's Tip

Chef's tip: for a golden gratin, bake for 10 minutes at 180 °C (350 °F) with a little grated cheese on top. You can assemble this dish a day ahead; it keeps for 2 days in the fridge. Swap the turkey ham for shredded chicken for a lighter version.
