🛒 Ingredients

10 servings

10
  • 4 large eggs
  • 1 ¾ cups (350 g) granulated sugar
  • 2 cups (500 ml) whole milk
  • 6 tablespoons desiccated coconut
  • 6 tablespoons grated cheese (such as cheddar or parmesan)
  • 8 heaping tablespoons all-purpose flour
  • 1 tablespoon baking powder
  • Butter and flour for the pan

Directions

  1. 1

Preheat the oven to 350 °F (180 °C). Grease and flour a 9–10 inch (24–26 cm) round baking pan.

  2. 2

Place the eggs, sugar, milk, coconut, grated cheese, flour, and baking powder in a blender. Blend for 1–2 minutes until completely smooth.

  3. 3

Pour the batter into the prepared pan and place it in the centre of the oven.

  4. 4

Bake for 30–40 minutes, until the top is deep golden and a skewer inserted in the middle comes out clean.

  5. 5

Turn off the oven and leave the bake inside, door closed, for 10 minutes — this prevents it from sinking.

  6. 6

Remove from the oven, allow to cool for 15 minutes, then unmould and serve.

💡 Chef's Tip

Do not open the oven door during baking — the bake will immediately collapse. Serve warm or at room temperature. Add a pinch of cinnamon or vanilla extract for extra flavour.
