  • 2 fresh salmon fillets (5–7 oz each)
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp Dijon mustard
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped (optional)
  • 1.5 tbsp fine breadcrumbs
  • 1 tbsp grated Parmesan cheese
  • Fine salt and freshly ground pepper
  • Zest of half a lemon
  • 1.1 lbs sweet potatoes
  • 2 tbsp butter
  • 3.5 fl oz milk or cream (to taste)
  • 2 bell peppers (red and yellow), cut into large chunks
  • 7 oz button mushrooms, halved
  • 1 red onion, quartered
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp minced garlic
  • Fresh thyme

Directions

    Preheat the oven to 390°F. Line a baking sheet with parchment paper.

    Peel the sweet potatoes, cut them into cubes, and boil in salted water for 15 minutes until tender. Drain and set aside.

    Mash the sweet potato cubes with the butter and warm milk until smooth. Season with salt, pepper, and nutmeg. Keep warm.

    In a bowl, mix the olive oil, mustard, parsley, dill, garlic, and lemon zest.

    Brush the salmon fillets with the herb mixture on all sides.

    In another bowl, mix the breadcrumbs, Parmesan, salt, and pepper. Sprinkle generously over the top of the fillets.

    In a second bowl, combine the balsamic vinegar, honey, the remaining olive oil, thyme, garlic, salt, and pepper.

    Place the vegetables (peppers, mushrooms, onion) on the baking sheet, drizzle with the balsamic mixture, and toss gently.

    Place the salmon in the center of the sheet, between the vegetables. Bake for 12–15 minutes.

    The salmon is cooked when the flesh flakes easily and remains opaque. The vegetables should be caramelized and tender.

    Plate the sweet potato mash in the center, place the salmon fillet on top, and arrange the vegetables around it. Drizzle with the pan juices.

💡 Chef's Tip

For perfectly juicy salmon, remove from the oven as soon as it just begins to turn opaque in the center—it will continue to cook slightly. Use aged balsamic vinegar for more complexity. You can prepare the sweet potato mash up to 2 hours in advance and reheat it in a double boiler.
