Directions

  1. 1

Prepare the chicken: slice the breasts to an even thickness (about 3/4 inch), and season generously with salt and pepper on both sides.

  2. 2

Heat a skillet or grill pan over high heat with the olive oil. Cook the chicken for 5-6 minutes per side until golden brown and cooked through (internal temperature of 165°F). Let rest for 3-4 minutes, then slice into strips.

  3. 3

Prepare the Caesar dressing: pour the mayonnaise into a bowl. Finely grate the garlic directly into it. Add the mustard, lemon juice, and Worcestershire sauce.

  4. 4

Whisk the dressing well, incorporating the grated Parmesan. Adjust seasoning with salt and pepper. Set aside.

  5. 5

Wash and dry the romaine lettuce thoroughly. Cut into 1 to 1.5-inch strips.

  6. 6

Assemble the salad: place the lettuce in a large salad bowl or directly onto plates.

  7. 7

Pour the Caesar dressing over the lettuce and toss gently to coat evenly.

  8. 8

Top with the warm sliced chicken, croutons, and fresh shaved Parmesan.

  9. 9

Serve immediately while the salad is crisp and the chicken is still warm.

💡 Chef's Tip

For an even richer dressing, add one small, desalted, and finely minced anchovy. Prepare the dressing just before serving for maximum freshness. If making homemade croutons, brush stale bread with butter and garlic, then toast in the oven at 350°F for 8 minutes.
