  • 1 bunch kale
  • 2 slices bacon, chopped
  • 3 cloves garlic, minced
  • 1 medium onion, thinly sliced
  • 1/2 tsp paprika
  • 1 sprig fresh thyme
  • 1 tomato, diced
  • 1 red bell pepper, diced
  • 4 plantains
  • 1 tbsp vegetable oil

Directions

    Clean the kale and soak it in a bowl of cold water for 5 to 10 minutes. Drain well and chop into pieces.

    Prepare all ingredients: thinly slice the onions, mince the garlic, dice the tomato and red bell pepper.

    Cook the bacon in a pot until crispy. Remove and set aside.

    In the same pot with the bacon fat, add the onions, garlic, and thyme. Stir for 1 minute.

    Add the tomato, red bell pepper, and paprika. Sauté for 2 to 3 minutes.

    Stir in the kale and cook over medium heat for 10 to 15 minutes until tender.

    Add the crumbled bacon, mix well, and serve hot with the plantains.

💡 Chef's Tip

You can add scotch bonnet pepper for extra heat. The plantains can be cooked separately (boiled or fried) and served as a side. For a lighter version, reduce the amount of bacon.
