Jamaican-Style Braised Chicken

- 1 whole chicken (about 3.3 lbs)
- 1 tomato, chopped
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 carrot, chopped
- 1 lime
- 2 tsp dried thyme
- 1 tsp allspice
- 2 tbsp soy sauce
- 2 tsp cornstarch
- 2 cups coconut milk
- 1 tbsp vegetable oil

Squeeze the lime over the chicken and rub well. Drain any excess juice.

Combine the tomato, onions, garlic, bell pepper, thyme, allspice, and soy sauce in a large bowl with the chicken pieces. Cover and marinate for at least one hour.

Heat the oil in a Dutch oven or large pot. Shake off the excess seasonings while removing each piece of chicken from the marinade. Reserve the marinade.

Lightly brown the chicken in the hot oil, working in batches. Place the browned pieces on a plate to rest.

Drain any excess oil and return the chicken to the pot. Pour the reserved marinade over the chicken and add the carrots. Cook over medium heat for 10 minutes.

Dissolve the cornstarch in a small amount of water. Add the coconut milk and the dissolved cornstarch to the pot. Simmer until the chicken is tender and the sauce has thickened.

Marinate the chicken for at least 2 hours for the best flavor. Serve with white rice or root vegetables. You can use pre-cut chicken pieces if preferred.
