Jamaican Festival (Sweet Fritters)
These delicious Jamaican fritters, light and melt-in-your-mouth, are flavored with vanilla and cornmeal. Fried to perfection to a beautiful golden hue, they make an ideal traditional side dish or a treat to enjoy with family.

Pour oil into a heavy-bottomed saucepan (at least 3 inches deep) and heat to 350°F (175°C).

In a large bowl, combine the flour, cornmeal, sugar, baking powder, and salt.
