🛒 Ingredients

2 servings

2
  • 2.2 lbs (1 kg) pork shank
  • 5 waxy potatoes, sliced into rounds
  • 2 beef bouillon cubes
  • 1 ripe tomato, diced
  • 2 cups boiling water
  • 1 tablespoon oil
  • 2 garlic cloves, crushed
  • 1 bay leaf
  • Fresh thyme
  • Salt and black pepper to taste

Directions

  1. 1

Heat the oil in a pressure cooker over high heat. Brown the pork shank on all sides until golden.

  2. 2

Meanwhile, bring water to a boil in a small saucepan and dissolve the bouillon cubes.

  3. 3

Once the pork is browned, pour in the hot broth, add the diced tomato, crushed garlic, bay leaf, and thyme. Season to taste, seal the pressure cooker, and cook under pressure for 30 minutes.

  4. 4

Remove the pork shank and place it on a serving dish. Reserve the cooking broth.

  5. 5

Add the sliced potatoes to the remaining broth in the cooker and cook for 5 minutes. Arrange them around the pork shank.

  6. 6

Pour the cooking broth over the dish and serve immediately, piping hot.

💡 Chef's Tip

For even richer flavor, marinate the pork shank overnight with garlic, thyme, and a pinch of salt before cooking.
