- 150 g Semolina flour
- 45 g Sesame seeds
- 12 g Sugar
- 5 g Dry yeast
- 4 g Salt
- 60 ml Vegetable oil
- 1 piece Egg
- 1 piece Egg white
- 240 ml Lukewarm milk
- 405 g All-purpose flour
- 5 ml Water

In a large bowl, mix 150g semolina flour, 45g sesame seeds, sugar, yeast, and salt.

Whisk the oil, whole egg, and egg white, then incorporate into the dry mixture.

Gradually pour in the lukewarm milk, stirring until a liquid and homogeneous batter is obtained.

Cover the bowl with a plate or plastic wrap and let rest for 1 hour at room temperature until the batter becomes frothy.

Gradually incorporate 375g all-purpose flour with a wooden spoon until a sticky dough is obtained.

Cover again and let rest for 30 minutes.

Line a baking sheet with parchment paper.

Lightly flour your work surface and hands. Knead the dough, gradually adding flour (about 30g) one spoonful at a time, until it detaches from the sides of the bowl.

Form a round loaf and place it on the prepared baking sheet.

Lightly cover with a cloth and let rise for 1 hour in a warm place until the bread doubles in volume.

Preheat the oven to 190°C. Bake for about 30 minutes until the bread is golden brown.

Ensure the milk is lukewarm (around 37°C) to properly activate the yeast. You can check the rise by gently pressing on the dough - it should spring back slightly. For optimal results, use fresh, good quality yeast.
