🛒 Ingredients

8 servings

8
  • 700 g (1.5 lb) pork loin, cut into cubes
  • 300 g (10 oz) diced smoked bacon
  • 2 ripe tomatoes, diced
  • 1/2 onion, finely chopped
  • 1 teaspoon ground black pepper
  • 2 cups (480 ml) water
  • Salt to taste

Directions

  1. 1

Heat a large skillet or Dutch oven over medium heat. Add the diced bacon and cook until golden and crispy, rendering its fat.

  2. 2

Add the chopped onion to the pan and sauté for 2–3 minutes until softened and translucent.

  3. 3

Add the pork loin cubes and sear on all sides over high heat until nicely browned.

  4. 4

Season with salt and pepper, pour in the water, then cover and simmer on low heat for 30 minutes.

  5. 5

Remove the lid and continue cooking until most of the liquid has evaporated.

  6. 6

Stir in the diced tomatoes, remove from heat, and let the residual warmth soften them gently.

  7. 7

Serve immediately with white rice, mashed potatoes, or crusty bread.

💡 Chef's Tip

Add a bay leaf and a sprig of fresh thyme while simmering for a richer, more aromatic flavor. Remove both before serving.
