🛒 Ingredients

8 servings

8
  • 1.5 kg (3.3 lbs) pork loin
  • 1 medium onion, roughly chopped
  • 4 garlic cloves
  • 4 bay leaves
  • 2 tablespoons lemon juice
  • 60 ml (¼ cup) olive oil
  • 1½ teaspoons salt
  • Freshly ground black pepper to taste

Directions

  1. 1

Preheat oven to 200°C (400°F). Pierce the pork loin all over with a sharp knife so the marinade can penetrate deep into the meat.

  2. 2

Blend the onion, garlic, lemon juice, olive oil, and salt into a smooth paste. Rub it thoroughly over the entire surface of the pork loin.

  3. 3

Place the pork in a roasting pan with the bay leaves. Cover tightly with aluminum foil and roast for 30 minutes.

  4. 4

Add ½ cup of water to the pan to build a flavorful base and keep the meat moist, adding more as needed.

  5. 5

Remove the foil, flip the pork loin, and roast uncovered until deep golden brown, basting occasionally with the pan juices.

  6. 6

Check doneness by piercing with a knife — clear juices mean it's ready. Rest 5 minutes before slicing and serving with the pan drippings.

💡 Chef's Tip

Marinate the pork overnight in the fridge for deeper flavor. Serve alongside roasted potatoes, steamed greens, or a crisp garden salad.
