Tender chicken drumettes marinated in a rich blend of mustard, honey, soy sauce, and garlic. A crowd-pleasing recipe that's best prepared the night before — the longer the marinade, the deeper the flavour.

3 servings

3
  • 1 kg (2.2 lb) chicken drumettes
  • 300 g (1¼ cups) Dijon or wholegrain mustard
  • 70 ml (¼ cup) runny honey
  • 50 ml (3½ tbsp) soy sauce
  • 1 generous pinch dried oregano
  • 6 garlic cloves, minced or pressed
  • Salt, to taste
  • Freshly ground black pepper, to taste

Directions

  1. 1

Rinse the chicken drumettes under cold water and pat them dry with paper towels. Season each piece individually with salt.

  2. 2

In a large bowl, whisk together the mustard, honey, soy sauce, oregano, and garlic. Season with pepper and mix until a smooth, glossy marinade forms.

  3. 3

Add the drumettes to the bowl and toss to coat evenly. Cover with cling film and refrigerate overnight, or for at least 4 hours.

  4. 4

Preheat the oven to 200 °C / 400 °F (fan-forced) or heat a grill to medium-high. Arrange the drumettes on a wire rack or lined baking tray.

  5. 5

Bake for 35–40 minutes, turning halfway, until caramelised and cooked through. For the grill, cook about 20 minutes, turning regularly for even colour.

💡 Chef's Tip

Brush with an extra drizzle of honey in the last 5 minutes for a glossy glaze. Serve alongside a crisp green salad or steamed rice to soak up the sauce.
