🛒 Ingredients

4 servings

4
  • 120 ml extra virgin olive oil
  • 60 ml freshly squeezed lemon juice
  • 1 tsp fine salt
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1/2 tsp freshly ground black pepper
  • 1 garlic clove, crushed
  • 80 g onion, finely sliced
  • 30 g fresh flat-leaf parsley, chopped

Directions

  1. 1

Peel and crush the garlic clove using a knife or garlic press. Finely slice the onion and chop the flat-leaf parsley.

  2. 2

In a bowl, combine the olive oil and lemon juice. Add the salt, rosemary, oregano and black pepper. Whisk vigorously with a fork for about a minute until you get a light, even emulsion.

  3. 3

Stir in the crushed garlic, sliced onion and chopped parsley. Mix well so all the aromatics are evenly distributed throughout the marinade.

  4. 4

Generously coat 1 kg of chicken — pieces or whole — with the marinade, making sure every surface is well covered. Wrap with cling film and refrigerate for at least 1 hour, ideally overnight for deeper, more developed flavors.

💡 Chef's Tip

For even bolder flavor, score the chicken flesh with a knife before applying the marinade — the aromatics will penetrate much deeper. The marinade keeps for up to 3 days in the fridge in a sealed jar.
