Directions

  1. 1

Prepare the citrus: squeeze the juice from one lemon and half an orange. Zest the other lemon.

  2. 2

Make the vinaigrette by whisking together the citrus juice, lemon zest, olive oil, finely minced garlic, salt, and pepper. Set aside.

  3. 3

Clean and chop the vegetables: cut the cherry tomatoes in half, slice the cucumber into sticks, and slice the avocado into thin strips.

  4. 4

Prepare the salad base: arrange the arugula in a large salad bowl or on serving plates.

  5. 5

Heat a non-stick skillet with a drizzle of olive oil over high heat. Sauté the shrimp for 2 to 3 minutes on each side until golden brown. Season lightly.

  6. 6

Assemble the salad: add the warm shrimp over the arugula, followed by the cherry tomatoes, cucumber, and avocado.

  7. 7

Drizzle the vinaigrette over the salad and toss gently to coat all ingredients.

  8. 8

Garnish with chopped fresh parsley and sprinkle with a pinch of Espelette pepper if you like a touch of heat.

  9. 9

Serve immediately while the shrimp are still warm.

💡 Chef's Tip

For optimal flavor, dress the arugula only a few minutes before serving. The shrimp should be cooked quickly over high heat to remain tender. You can also cook them in advance and serve them cold if you prefer.
