Directions
- 1
Prepare each flavored gelatin separately using only half the water stated on the packet: dissolve the powder in 150 ml boiling water, then stir in 100 ml cold water. Repeat for each flavor.
- 2
Pour each gelatin into a shallow dish and refrigerate for at least 2 hours until completely set and firm.
- 3
Bloom the unflavored gelatin in 5 tablespoons of cold water, then microwave for 15 seconds until fully dissolved. Let it cool slightly.
- 4
Blend the whipping cream, condensed milk, and dissolved unflavored gelatin together until smooth and creamy. Set aside.
- 5
Cut the set colored gelatins into roughly 1 cm cubes and transfer them all to a large bowl.
- 6
Gently pour the cream mixture over the gelatin cubes and fold carefully with a spatula to coat evenly without breaking them.
- 7
Pour into a lightly water-moistened bundt mold or loaf pan. Refrigerate for at least 2 hours.
- 8
Unmold onto a serving plate and serve well chilled, or present directly in the bowl without unmolding.
💡 Chef's Tip
Prepare the colored gelatins the day before for cleaner, neater cuts. Choose strongly contrasting bright colors for the most spectacular mosaic effect. Let the cream mixture cool to room temperature before folding in the cubes to prevent them from melting.
