🛒 Ingredients

12 servings

12
  • 1 can sweetened condensed milk (14 oz / 395 g)
  • 1 tablespoon unsalted butter
  • 1 cup heavy whipping cream, well chilled (7 oz / 200 g)
  • 3 egg whites, beaten to stiff peaks
  • 4 tablespoons sweetened chocolate powder

Directions

  1. 1

In a saucepan over medium heat, combine the condensed milk, butter, and chocolate powder. Stir constantly until the mixture thickens and pulls away cleanly from the sides of the pan.

  2. 2

Remove from heat and allow to cool completely to room temperature.

  3. 3

Gently fold the cold heavy cream into the cooled chocolate base until fully combined and smooth.

  4. 4

Add the stiff egg whites in three additions, folding carefully with a spatula using bottom-to-top motions to keep the mixture light and airy.

  5. 5

Pour into individual glasses or a large serving dish and freeze for approximately 50 minutes.

  6. 6

Remove from the freezer a few minutes before serving and enjoy well chilled, topped with your favourite garnish.

💡 Chef's Tip

Beat the egg whites with a pinch of salt for extra volume and stability. Garnish with chocolate shavings, a dusting of cocoa powder, or fresh berries for an elegant finish.
