🛒 Ingredients

10 servings

10
  • 500 g (17.5 oz) milk chocolate, chopped
  • 200 ml (¾ cup) heavy whipping cream
  • 200 ml (¾ cup) whipped cream, firmly whipped
  • 12 g (1 tbsp) unflavored gelatin powder
  • 60 ml (¼ cup) cold water

Directions

  1. 1

Melt the milk chocolate in a heatproof bowl set over a saucepan of simmering water (double boiler), or in the microwave in 30-second intervals, stirring between each burst until completely smooth.

  2. 2

Pour the heavy cream into the melted chocolate and stir continuously until the mixture is fully combined, silky, and lump-free.

  3. 3

Gently fold in the whipped cream using a spatula with slow, circular upward motions to keep as much air as possible in the mixture.

  4. 4

In a small bowl, sprinkle the gelatin powder over the cold water and let it bloom for 2 minutes. Microwave for a few seconds to fully dissolve, then stir well.

  5. 5

Pour the dissolved gelatin into the chocolate mixture and stir until evenly incorporated.

  6. 6

Transfer the mousse to serving glasses or a large dish, cover with plastic wrap, and refrigerate for at least 3 hours until set. Serve chilled.

💡 Chef's Tip

Top with chocolate shavings, crushed cookies, or a sprinkle of sea salt for an extra touch. Dark chocolate works beautifully as a substitute for a more intense, less sweet flavor.
