A silky, airy mousse that turns a handful of pantry staples into a dessert worthy of a family Sunday. Sweetened condensed milk brings the richness, cream adds softness, and gelatin gives it that clean, sliceable set. Twenty minutes of work, then the fridge does the rest.

🛒 Ingredients

6 servings

6
  • 1 sachet (10 g) strawberry-flavoured powdered gelatin (such as Dr. Oetker)
  • 250 ml hot water
  • 1 can (397 g) sweetened condensed milk
  • 1 carton (200 g) whipping cream, or 1 tub of thick cream without whey
  • A few fresh strawberries to decorate (optional)

Directions

  1. 1

Bring the water to a rolling boil, turn off the heat, then sprinkle in the gelatin while whisking hard until it dissolves completely and no lumps remain.

  2. 2

Let it cool for about 5 minutes — it should still be warm but comfortable to touch before you add the condensed milk.

  3. 3

Stir in the sweetened condensed milk, whisk well, then blend in the cream until the mixture is smooth and even.

  4. 4

Pour into a mould rinsed with cold water and refrigerate for at least 5 hours, until the mousse is fully set.

💡 Chef's Tip

Rinse the mould with cold water before pouring in the mixture — it will unmould effortlessly. For a firmer set, stir in 1 g of powdered gelatin bloomed in 2 tablespoons of hot water, and chill overnight.
