🛒 Ingredients

10 servings

10
  • 2 cans sweetened condensed milk (about 395 g / 14 oz each)
  • 2 tubs full-fat thick cream or heavy cream (about 200 g / 7 oz each)
  • 250 ml concentrated passion fruit juice
  • 200 g dark chocolate, about 70% cocoa

Directions

  1. 1

Pour the condensed milk, one tub of cream and the passion fruit juice into a blender.

  2. 2

Blend on medium speed for 3 to 4 minutes at most, until smooth and slightly aerated.

  3. 3

Taste it: if it feels too sweet, add a splash more concentrated juice and blend a few seconds longer until it is balanced and pleasantly tangy.

  4. 4

Chill the mousse while you make the topping.

  5. 5

Melt the dark chocolate in a bain-marie over low heat, stirring constantly.

  6. 6

Off the heat, stir the second tub of cream into the melted chocolate.

  7. 7

Whisk until you have a smooth, glossy, fully homogeneous ganache.

  8. 8

Spoon the mousse into a large dish or individual glasses, then cover generously with the chocolate topping.

  9. 9

Refrigerate for at least one hour until set. Serve well chilled.

💡 Chef's Tip

Passion fruit is the star here, so always taste before chilling and adjust the juice to balance the sweetness of the condensed milk against the fruit's acidity. Pour the topping over a well-chilled mousse so it sets on top instead of sinking. A swirl of cream or a few fresh passion fruit seeds before serving make it look and taste even better.
