Directions
- 1
Pour the heavy cream, condensed milk, and strawberry powder into a stand mixer bowl. Beat on medium speed for about 3 minutes until smooth and fully combined.
- 2
In a small bowl, sprinkle the gelatin over the 3 tablespoons of cold water and let it bloom for 2–3 minutes.
- 3
Microwave the bloomed gelatin for 10 seconds until fully dissolved. Allow it to cool slightly before using.
- 4
Add the dissolved gelatin to the mixer bowl and beat again for 1 minute to incorporate evenly.
- 5
In a separate chilled bowl, whip the heavy cream to stiff peaks.
- 6
Gently fold the whipped cream into the strawberry mixture using a silicone spatula, with slow circular motions to keep it airy.
- 7
Fold in the chocolate shavings or chopped fresh strawberries until evenly distributed.
- 8
Cover and refrigerate overnight, or at least 8 hours, until the mousse is firm and set.
💡 Chef's Tip
Chill your mixing bowl and beaters in the freezer for 15 minutes before whipping the cream — it makes a big difference. This mousse also works beautifully as a tart filling or layered in a trifle glass with sponge cake and berries.
