🛒 Ingredients

8 servings

8
  • 1½ cups all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ½ cup granulated sugar
  • 2 eggs, separated
  • ⅓ cup unsalted butter, melted
  • ⅔ cup heavy cream or whole milk
  • 1 teaspoon baking powder
  • ½ cup dark chocolate chips
  • 1 teaspoon vanilla extract

Directions

  1. 1

Preheat oven to 350 °F (180 °C). Grease a muffin tin or line with paper liners.

  2. 2

Sift together flour and cocoa powder in a bowl. Set aside.

  3. 3

In a separate bowl, beat egg yolks with sugar, vanilla, and melted butter for about 3 minutes until pale and fluffy.

  4. 4

Gradually fold in the flour mixture and cream, alternating between the two, starting and ending with flour.

  5. 5

Gently stir in baking powder and chocolate chips with a spatula — do not overmix.

  6. 6

Beat egg whites to stiff peaks, then fold them into the batter in three additions using a light, lifting motion.

  7. 7

Divide batter among muffin cups, filling each about three-quarters full.

  8. 8

Bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean.

  9. 9

Cool for 5 minutes in the pan before turning out. Serve warm for maximum chocolate chip meltiness.

💡 Chef's Tip

For a molten center surprise, tuck a square of dark chocolate into the heart of each muffin before baking. Store in an airtight container for up to 2 days at room temperature.
