  • 2 tbsp dried shrimp
  • 6 fl oz boiling water
  • 1 head napa cabbage
  • 2 tbsp peanut oil
  • 4 green onions, chopped
  • 1 tbsp fresh ginger, minced
  • 1 tbsp soy sauce
  • 1 tbsp water
  • 2 tsp cornstarch
  • 1 tsp fine salt
  • 0.5 tsp pepper

    Place the dried shrimp in a bowl and pour the boiling water over them. Cover and let sit for 30 minutes. The shrimp will plump up and turn a lighter color.

    Cut the napa cabbage in half lengthwise. Rinse and shake dry. Remove the core and cut the cabbage into bite-sized pieces.

    In a bowl, whisk together the soy sauce, water, and cornstarch. Set aside.

    Heat the oil in a wok over medium-high heat. Add the rehydrated shrimp and ginger, stir-fry for 1 minute. Add the napa cabbage and green onions, cook for 5-7 minutes until tender-crisp.

    Pour in the sauce and stir for 1-2 minutes until thickened. Season with salt and pepper to taste.

💡 Chef's Tip

Prefer small dried shrimp (about 1/4 inch). For larger sizes, you'll need more water and time. Vegetarian version: replace shrimp with 4-5 rehydrated and finely chopped dried shiitake mushrooms.
