🛒 Ingredients

2 servings

2
  • 500 g (1 lb) ground beef or beef-pork blend
  • ½ onion, finely chopped
  • 2 tbsp fresh flat-leaf parsley, chopped
  • 2 tbsp fresh chives, chopped
  • 1 tbsp yellow mustard
  • Juice of ½ lemon
  • 1 tsp olive oil
  • 6 slices smoked bacon
  • 2 fresh eggs
  • Salt and black pepper to taste

Directions

  1. 1

    Preheat oven to 200 °C / 400 °F.

  2. 2

In a large bowl, combine ground meat, onion, parsley, chives, mustard, lemon juice, olive oil, salt, and pepper.

  3. 3

Mix thoroughly by hand until evenly combined.

  4. 4

Divide the mixture into two equal portions and shape into thick patties.

  5. 5

Place on a baking tray lined with parchment paper and press a deep well into the center of each patty using a glass.

  6. 6

Line each well with 3 bacon slices, covering the bottom and sides.

  7. 7

Bake for 20 minutes until the meat is cooked through and browned.

  8. 8

Crack one egg into each nest, season with a pinch of salt, and return to the oven for 12–15 minutes depending on desired egg doneness.

  9. 9

Remove from oven, garnish with fresh parsley, and serve immediately.

💡 Chef's Tip

For a runny yolk, pull the nests out as soon as the egg white turns fully opaque. Swap yellow mustard for Dijon for a bolder kick.
