Directions

  1. 1

Heat the rum over medium heat in a small saucepan until hot (do not boil). Remove from heat and add the raisins and vanilla extract. Let sit for at least 30 minutes.

  2. 2

After soaking, drain the excess rum, reserving 1/4 cup for the ice cream base.

  3. 3

In a large bowl, whisk together the sweetened condensed milk, brown sugar, cinnamon, allspice, salt, and the reserved rum. Stir until the brown sugar is completely dissolved.

  4. 4

In another bowl, whip the cold heavy whipping cream with an electric mixer until stiff peaks form.

  5. 5

Gently fold the whipped cream into the condensed milk mixture without deflating it. Fold in the drained soaked raisins.

  6. 6

Pour the mixture into a loaf pan or an airtight container. Cover and freeze for at least 6 hours until firm.

💡 Chef's Tip

Prepare the soaked raisins the day before for optimal flavor. Let sit at room temperature for 5-10 minutes before serving. Keeps for up to 2 weeks in the freezer.
