- 1
Cut the fish fillets into uniform cubes. Finely mince the garlic. Wash and cut the potatoes, carrots, and leek into thin strips.
- 2
Melt the butter in a Dutch oven or large pot and add the garlic. As soon as it begins to brown, stir in the flour continuously to form a smooth roux.
- 3
Gradually pour in the fish stock while stirring constantly to prevent lumps from forming.
- 4
Add the potatoes, carrots, and leek. Cover partially and let cook for 15-20 minutes until the vegetables are tender.
- 5
Gently stir in the milk and crème fraîche. Mix well.
- 6
Add the cubed fish and shrimp. Cook for 5-8 minutes over medium heat until the fish becomes opaque.
- 7
Season generously with salt and pepper to taste. Pour into bowls and garnish generously with chopped fresh chives.
💡 Chef's Tip
Use a high-quality fresh fish stock for better flavor. Do not overcook the fish so that it remains tender and succulent. The soup can be prepared in advance and reheated gently before serving. Serve with toasted bread or extra crème fraîche for added richness.
