- 1.75 oz chorizo
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 1/4 cups basmati rice
- 14 oz canned crushed tomatoes
- 7 oz shrimp

Bring water to a boil. In a non-stick or shallow pan with a lid, sauté the onion, bell peppers, chorizo, and garlic in the oil over high heat for 3 minutes.

Stir in the rice and crushed tomatoes along with 2 cups of boiling water, cover, and cook over high heat for 12 minutes.

Uncover the pan and stir; the rice should be nearly tender.

Stir in the shrimp with a little more water if the rice seems dry, then cook for another minute until the shrimp are light pink and the rice is tender.
