Orange Soy Glazed Crispy Chicken
A delicious crispy chicken dish coated in a sweet and savory Asian-inspired citrus sauce. Tender chicken thighs, cooked to perfection, are paired with fresh orange zest and savory soy sauce.

- Zest of 1 orange
- 1/4 cup orange juice
- 1/4 cup soy sauce
- 1/4 cup water
- 1/3 cup rice vinegar
- 1 tbsp cornstarch
- 1 tbsp sesame oil
- 1/2 cup sugar
- 23 oz chicken thighs
- 2 eggs
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cornstarch (for coating)
- 1/2 cup flour
- 2 cups vegetable oil
- 2 cloves garlic, minced
- 1 shallot, minced
- 2 sprigs green onions
- 1 handful sesame seeds
- 1 cup rice

Prepare the sauce: whisk together the orange zest, orange juice, soy sauce, water, rice vinegar, cornstarch, sesame oil, and sugar in a bowl. Set aside.

Cut the chicken thighs into cubes of approximately 3/4 inch.

In a bowl, whisk the eggs with the salt and black pepper. Add the chicken cubes and mix well.

In another bowl, mix the cornstarch and flour.

Using a slotted spoon, remove the chicken cubes from the egg mixture and coat them thoroughly in the cornstarch-flour mixture.

Heat the vegetable oil to 350°F. Fry the chicken in batches for 4-5 minutes until golden and crispy. Drain on paper towels.

In a skillet, sauté the garlic and shallot for a few seconds. Pour in the sauce and heat until thickened (2-3 minutes).

Add the fried chicken to the sauce and toss to coat. Garnish with green onions and sesame seeds.

For an extra crispy result, fry the chicken twice: first for 2 minutes, then a second time for 2 minutes after cooling. The sauce can be prepared in advance and stored in the refrigerator for 24 hours.
